Mi historia del pan de leche / My tale of pan de leche

Since I was little, for me and my sister’s birthdays, my grandmother would always prepare us a table full of sweet and salty treats. Today I am going to tell you about el pan de leche. 

Grandma made el pan de leche like mini sandwiches filled with sweet ham, cheese, and mayonnaise. They had a touch of sweetness (like un pebete argentino), soft and spongy. You could eat a thousand. 

Years passed and when I collaborated with La Granja Petitbo, creating the menu, I thought this famous pan de abuelina would be perfect for the weekend brunches. I would prepare over 6 kilos of dough and show the whole team at the restaurant the trick to getting them smooth and perfectly round. 

Since we had a new menu each day, I began to play with the bread recipe. When replacing the the ingredients, I converted this white bread made of cow’s milk, to a bread made of spinach with oat milk or a lime bread to accompany theburger de merluza. With this same recipe I created more than 15 varieties of bread. 
Until one day my sister Nati arrived (she is a nutritionist), visiting from Argentina, and began to talk to me about calories, the benefits of reducing the amount of butter and those things that us chefs don’t like to hear. 

At the same time I discovered Jody Grimm’s blog and that was the moment that I decided to take it one step further. I began to be more conscious of the food that I was giving to my body and the people I love. 
I took my first step when I made my little breads, adding each ingredient with care, and creating harmony between nutrients, calories, and flavor. 

I am delighted with the results (long and short term).

Desde pequeñita, para mis cumpleaños y el de mis hermanas, mi abuela siempre nos preparaba una mesa dulce y salada, llena de delicias. Hoy les voy a contar sobre el pan de leche.
La abuela hacía el pan de leche como mini sandwichs rellenos de jamón dulce, queso y mayonesa. Tenían ese toque dulzón (como un pebete argentino), tierno y esponjoso. Te comías mil.
Pasaron los años y cuando colaboré creando la carta para La Granja Petitbo, pensé que el famoso pan de la abuelina sería perfecto para los brunchs del fin de semana. Preparaba más de 6 kilos de masa. Y le enseñé a todo el equipo de la granja el truco para que queden super lisos y redonditos.

Como hacía un menú por día, empecé a jugar con la receta del pan. Y reemplazando sus ingredientes, convertía un pan blanco de leche de vaca, en uno de espinacas con leche de avena o de limón para acompañar la burger de merluza. Con esa misma receta, creé más de 15 variantes de pan.
Hasta que un día llegó mi hermana Nati (ella es nutricionista) de visita de Argentina y empezó a hablarme de calorías, de los beneficios de achicar la porción de mantequilla y esas cosas que a las cocineras no nos gusta escuchar.

Al mismo tiempo conocí el blog de Jody Grimm y ese fue el momento cuando decidí ir un paso más allá y empezar a tomar conciencia de los alimentos que le doy a mi cuerpo y a la gente que quiero.
Mi primer escalón, lo subí cuando cociné los primeros pancitos, cuidando cada uno de los ingredientes y logrando una armonía entre, nutrientes, calorías, cuidado y sabor.

Estoy encantada con el resultado (a corto y largo plazo) ;)
Aquí les comparto la receta, espero que los disfruten y me cuenten que tal les quedaron.





Recipe:
3 tablespoons of yeast
3 tablespoons of brown cane sugar.
Soy milk, 1 cup
Warm water, 1 cup
2 cups of Whole Wheat Flour 
Olive oil, 1/2 cup
salt and shredded ginger to taste

Combine the ingredients (make sure the salt does not touch the yeast), knead them until the dough becomes smooth and leave it  covered in a warm place to set, until it becomes the right size. Continue to knead the dough and make little round balls. Continue to let rise and cook at about 350 degrees. for approximately 10 ten minutes.

Receta:

Levadura 40gr.
Azúcar de caña dorada 3 cucharadas
Leche de soja, 1 taza.
Agua tibia, 1 taza.
Harina integral 500gr.
Aceite de oliva 1/2 taza.
Sal, jengibre rayado a gusto.

Unir los ingredientes (no poner la sal en contacto con la levadura), amasar hasta que quede una masa lisa y dejar reposar tapado, en lugar tibio hasta que suplique su tamaño.
Volver a amasar y formar bolitas redondas. Volver a dejar levar y cocinar a horno moderado (180º) por aproximadamente 10min.
